What do I need to consider when buying a combi steam oven?
Maxima combi steam ovens have many similarities, but there are a few important differences to note when looking for a new purchase. Don’t only look at the capacity, but also the exterior dimensions. For example, in the 6 X 1/1 GN and 10 X 1/1 GN touch-controlled models, the larger version goes up in height instead of width. This means that this Maxima combi steam oven is always 50cm wide and 89cm deep. It is also good to look at the wattage and voltage. Most appliances work on three phase current (440V) but there are also some appliances that can be operated on 230V.
It is good to know that these ovens cater to Gastronorm sizing. There are models for 1/1 GN and 2/3 GN trays. There are also differences between combi steam ovens with the same capacity, such as the 5 x 2/3 GN oven and the 11 x 1/1 GN oven. These appliances are available in versions with both analogue and digital controls. All other Maxima combi steam ovens are only available in a digital version. These come with 99 or 240 adjustable programmes.
The digital models have an adjustable temperature range of 50 to 270⁰C, or 30 to 260⁰C, while other steamers range between 100 and 275⁰C. With a digital combi steam oven, the steaming time can also be set more precisely. These digital models have ten steam levels between 10% and 100%.

It’s important to prepare food in kitchen equipment that is clean. Fortunately, cleaning a combi steam oven is not a lot of work. Because the appliance must first be allowed to cool completely, you need to take into account that you will not be able to use it for a short time. The end of the working day is therefore a good time to clean it. Use lukewarm water, a mild detergent and a soft cloth for the stainless steel parts. For the door glass, only a little warm water is needed.
To make cleaning even easier, some models even have an automatic wash system. This convenient feature can be found in the touch control models.
