What different kinds of griddles are there?
Maxima has a wide range of griddles available. The main difference lies in the grill surface of the plate. This can either be smooth or contain grooves for a more authentic ‘grill’ option. A smooth griddle is used for more even cooking and is useful for almost all food items, like meat, fish, vegetables or even eggs. With the grooved surface, you get the well-known black grill marks that you also see on barbecues. These are mostly used for meat and fish, but grilling vegetables and fruit is also possible.
Maxima also has griddles with a combination of both grooved and smooth surfaces. This gives you the best of two grilling zones in a single appliance. In addition, you can choose between an electric or a gas griddle. Both versions have advantages. Electric grills heat up quickly and cool down quickly, which makes them easy to clean. A gas grill allows you to regulate the temperature more precisely. Using gas is also generally slightly more economical.
The larger appliances often have the griddle divided into two cooking zones. This is then called a 'double griddle' where both halves of the grill can be heated using separate thermostats. This is useful if you want to fry your food on one half and just keep it warm on the other half without burning it. Of course, the size of the griddle is also important. If there isn’t a lot of space in your kitchen, or if you are baking on location such as in catering or in a food truck, a tabletop griddle is very practical. What are the advantages of a griddle?
A griddle adds a lot of flavour to your dish. Just like when using a wok, you can cook at high temperatures on a grill plate, which means that meat and vegetables are cooked in no time. The flavour and nutrients are preserved. The large size of a grill plate is also an advantage. It allows you to cook several ingredients next to each other at the same time.
Because griddles usually need very little fat or oil, this way of cooking is healthy too. The grooves keep your food separate from the fat. So your piece of meat absorbs less fat. How do you use a griddle?
It’s important to let the griddle reach the right temperature first. Set the desired temperature and do not start cooking until it reaches it. You can grease the plate with a little oil while you wait. Then, put your food on the plate and only turn it over once so that the colour can develop properly and the juices are preserved as much as possible. Wipe the plate quickly with paper towel before placing new food on the griddle. When you have finished cooking, allow the plate to cool completely. Using a damp cloth is usually sufficient to clean the griddle. If there is a long interval between the last use and cleaning, you can put a little oil on your cloth to make the residue easier to remove.
What should you look for when buying a griddle?
First, decide where you want the appliance to go in your kitchen so you know what dimensions you need. What kind of capacity do you need? Will you be using the griddle every day or only a little? What dishes will you be using it for? These questions determine whether you need a double grill or whether a single one will suffice.
It’s also important to look at the capacity of the thermostat. A good griddle can reach a temperature of 300⁰C, but low temperatures, such as 50 and 70⁰C, can also be useful. What power supply is available to you? Can you use a gas griddle or should it be electric? With an electric griddle, you have to consider whether you need one with the standard 230V socket or if you have a 400V socket for high voltage current.
