Is there a single piece of equipment that lets you grill, heat, glaze, gratin and defrost? Yes, there is! The electric salamander grills from Maxima are multifunctional. One moment you can gratinate zucchini and in the next you can cook a piece of meat or fish. This all-rounder appliances deserves a place in every catering kitchen.
What is a salamander grill?
A salamander grill is a universal grill and can be seen as a combination of a grill and an open oven, making it a very versatile appliance. You can use it to grill, gratin, glaze, heat up or even defrost food. Just think how many different foods you can use it for!
The electric salamander gives off a very even heat so you can leave it on at a constant low temperature. This means you always have a fixed station where you can keep food warm for a while after it has been cooked. You can easily adjust the temperature with a rotary knob. In this way, you can use the salamander one moment to slowly cook an ingredient, and the next moment to grill at full power.
What can you use a salamander grill for?
The electric salamander grills are multifunctional and are useful appliances in every catering kitchen. Since Maxima has these appliances available in different sizes, there is a suitable format to suit every need. The ‘open’ models are even suitable for wall mounting. By adjusting the temperature and the height of the grid, you can create the right conditions for any dish you wish.
You can use a salamander grill for the following preparation methods:
- grilling
- glazing
- heating
- defrosting
- gratinating
The advantage of grilling on a salamander over using a griddle is that you only heat the top of your dish. This means that you can cook your dish for longer without it losing moisture at the bottom so it does not dry out quickly and the flavour is preserved for longer.
What different salamander grill models are there?
Maxima has both 'closed' models and salamander grills that are 'open'.
The closed models retain the heat better and are more economical. You can place the grid at varying heights to get your dish closer to the heating elements. The open models are also known as ‘salamander grills with an elevator’. The advantage of these is that you don't have to move your food. You simply bring the heating elements closer to your dish by pulling the top down using a lever. That makes things like gratinating very easy. With the same ease, you slide the top back up like an elevator.
Of course, with both models you can choose between different sizes. There are narrow models with room for one or two dishes, but you could also choose a wider model. These are ideal for when you need to prepare large quantities of food.
What else should you consider when buying a salamander grill? The salamander grills from Maxima are electric and come in different wattages and voltages. So look carefully whether you choose a salamander at 230V, or a device that work on 400V because the latter has a different power plug.
Are you mainly grilling? Then you could also consider a griddle for larger dishes or quantities. Maxima has a very wide range of electric and gas griddle. If you are mainly looking for something to keep your dishes warm, then we have many professional warming devices available. These include
, plate warmers, and heating lamps. How to use an electric salamander grill?
No matter what cooking technique you use the salamander grill for, the operation is always simple. You first bring the grill to temperature with the rotary knob. Dishes that need to be cooked au gratin or grilled require higher temperatures, while a low temperature more suitable for keeping a meal warm or glazing it.
The temperature indicator light shows you when the set temperature has been reached. Do not only set the temperature, but also determine the height needed for the salamander grill. On the open models with the elevator, you do this by raising or lowering the top of the grill. On the closed grills, you place the grill at the desired height. Crumbs are collected in the crumb tray at the bottom of the appliance. Be sure to empty this after each use.
How do you clean an electric salamander grill?
It is important to clean your salamander grill after each use. This will prevent your next dish from taking on the smell or taste from the previous dish. Fortunately, cleaning is as easy as operating the appliance. First, make sure the appliance is turned off and has cooled down before you start cleaning. Remove the grids and clean them with warm, soapy water. They can also be put in the dishwasher, as they are made from stainless steel. The same goes for the crumb collection tray at the bottom of the appliance. The housing is also made entirely from stainless steel, so you only need to wipe it down with a soft, damp cloth.
