A horizontal sausage filler will take up more counterspace, but you can still put it on your countertop, even if there is a cupboard above it.
The vertical sausage stuffer requires height to be able to fit, although it does take up less space on your workspace. How do you use a sausage stuffer?

With your other hand, you support the sausage at the end of the filling pipe. Make sure that as little air as possible enters the casing while filling the sausage. Fill the casing as tightly as possible, but not so tightly that you cannot twist the casing to form separate sausages. The automatic sausage stuffer works the same way, but here you do not have to turn it by hand, but you push the meat out with an electric foot pedal.
